With this recipe you’ll end up with ginger candy, ginger syrup, ginger water, and ginger infused sugar.

If you've ever purchased candied crystalized ginger you probably know it's not cheap stuff. Good news, it's easy and cheap to make. Here's the recipe I recently used to make candied ginger at home.
Nutshell: Ginger candy is made by peeling, slicing, and boiling ginger root with copious amounts of sugar, and then drying it out in a bed of more sugar.

Candied Ginger Recipe
Ingredients List:
Fresh ginger root 4-6 pieces
Sugar 2-4 cups
Water 2-4 cups
Supplies:
A pot or sauce pan
A spoon
A baking tray, parchment paper, wax paper , or tinfoil (going for a nonstick surface)
An airtight container or jar for storage
Directions:
Peel off the skin of the ginger root with a spoon.
Slice ginger into small pieces.
Place ginger in a pot, cover with water and simmer medium low for 30-60 minutes. Give it a little stir or shake now and then.
Strain ginger from water. *You can save the water for teas and whatnot.
Repeat step 3. if you want a less spicy candy ginger.
Add ginger back into the pot, along with equal parts water and sugar, enough to cover the ginger.
Simmer on medium low 30-60 minutes, stirring occasionally.
Strain ginger. *Keep the ginger syrup for any recipe that calls for syrup.
Coat and lay ginger pieces out on a bed of sugar, and leave to dry overnight, or longer if needed. Try not to let the pieces touch.
Store in an airtight container and enjoy.
